I made quinoa with caramelized onion, baked butternut squash with orange, pine nuts and rosemary. I started with this recipe for the butternut squash... http://www.veria.com/recipes/baked-butternut-squash-with-orange.html except I used agave instead of maple syrup because I don't have any maple syrup in the house right now. I cooked 1 cup of quinoa. Thinly sliced and caramelized a red onion. Lightly toasted some pine nuts. When the quinoa was done I mixed in the onions, pine nuts, sea salt and pepper (about a tsp of each), about 5 TBLS of the juice from the baked squash, and a good shake of dried parsley. Last I gently stirred in the squash. It tasted good but was still missing something, so I ground up some rosemary and threw in about a tsp and perfecto! You may like some garlic in it as well.
