The recipe calls for 4 1 & #8260;2 Cups Flour (1 & #8260;2 whole wheat, 1 & #8260;2 unbleached) - can I substitute 1/2 coconut flour and 1/2 Bob's Red Mill All purpose GF Flour? That's what I have in the house... but I'll go get something if there's something better... Also she's the only one in her class with this issue... I guess I could make a separate batch and freeze them... Also does anyone have a great GF icing recipe? I'd love for the icing to be pink but I've never used food coloring... Thank you!!! Cari Its a great recipe by the way in case anyone is interested = Birthday Muffins Preheat Oven to 350F Makes 24-30 large muffins 4 1 & #8260;2 C Flour (1 & #8260;2 whole wheat, 1 & #8260;2 unbleached) 3 tsp Baking soda 3 tsp Baking powder 3 pinches Salt 1 C Oil 3 Tbsp Vanilla (optional) 2 Mashed ripe bananas 1 1 & #8260;2 C Honey 2 1 & #8260;2 C Milk Mix first 4 ingredients and set aside. Mix remaining ingredients and add to the dry ingredients. Batter will pour like heavy cream. Pour into paper muffin cups or greased muffin tins (butter works well and adds flavor). Fill 3 & #8260;4 full. Bake for 20 minutes in 350 degree oven. Check with toothpick. Frosting: (1) 8 oz. package of softened cream cheese. Add vanilla, honey or maple syrup. Guest guest Posted January 13, 2010 Report Share Posted January 13, 2010 That should work ok for the flours. Try one when they are done to make sure they taste good. I was thinking beet juice for the icing too! If you have a safe butter and powdered sugar, beat the butter with a mixer and slowly add the powdered sugar until it's thick and taste good. Then mix in a few drops of beet juice to make it pink. For the butter, you could use spectrum shortening. You may want to add in some shortening to keep the icing from melting as most vegan butters tend to melt fast in icings. Good luck!
