Guest guest Posted January 5, 2010 Report Share Posted January 5, 2010 Avocado Salad 8 teaspoons vegetable -OR- olive oil 4 teaspoons lemon -OR- lime juice 1 1/2 cups mixed baby bean sprouts 1/3 cup mint leaves 4 radishes, very thinly sliced 1 teaspoon grated fresh ginger 2 ripe avocados, sliced pepper, to taste 1. Combine sprouts, mint and radish in a medium bowl. 2. Whisk ginger, juice and oil in a small jug. Season with pepper. 3. Pour dressing over sprout mixture and toss lightly to combine. Serves 4.
