Guest guest Posted January 5, 2010 Report Share Posted January 5, 2010 Apricot Pilaf two 250 g (9 oz) packets 90-second white rice -OR- 3/4 cup long grain white rice 1/3 cup finely chopped dried apricots 8 teaspoons pine nuts, toasted 8 teaspoons unsalted pistachio kernels, toasted, chopped 8 teaspoons coarsely chopped dill 8 teaspoons coarsely chopped flat-leaf parsley salt and pepper, to taste 1. Heat rice (or cook long grain rice) following packet instructions. 2. Transfer rice to a large heatproof bowl. Add apricots, pine nuts, pistachios, dill and parsley. Season with salt and pepper.
