Guest guest Posted January 4, 2010 Report Share Posted January 4, 2010 Poached Citrus ---- Preparation: 15 minutes + 15 to chill Cooking: 10 minutes ---- 3 navel oranges 3 limes 1 cinnamon stick 1 teaspoon whole coriander seeds 4 green cardamom pods, bruised -OR- 1/4 teaspoon cardamom seeds 1/3 cup sugar pinch saffron threads 1. Over a large bowl to catch juice, peel skin and white pith from oranges and limes. 2. Add 3/4 cup water to juice in bowl. 3. Slice oranges and limes thinly crosswise. 4. Combine juice mixture, orange slices, lime slices, cinnamon stick, coriander, cardamom, sugar and saffron in a large frying pan. Bring to a simmer over low heat. Simmer, uncovered, occasionally stirring gently for 2 to 3 minutes or until sugar dissolves. 5. Simmer, without stirring, for 2 to 3 minutes more or until liquid reduces slightly. Cool slightly. 6. Transfer mixture to a medium bowl. Cover with plastic food wrap; chill for 15 minutes. 7. Serve poached fruity with sorbet. BUDGET TIP: Omit saffron threads. TIP: Navel oranges are seedless.
