Ice-cream with Walnut Praline

Preparation: 5 minutes

Cooking: 15 minutes

1/3 cup walnuts, chopped

1/2 cup sugar

12 scoops vegan vanilla ice-cream, to serve

 

 

1. Preheat oven to 180 C (350 F).

 

2. Place walnuts on a baking tray lined with non-stick baking paper (parchment).

Bake for 4 to 5 minutes or until golden.

 

3. Combine sugar and 8 teaspoons water in a small saucepan over low

heat. Stir until sugar dissolves. To remove sugar crystals from side of pan.

brush with a wet pastry brush.

 

4. Bring to the boil. Boil, without stirring, for 10 minutes or until golden.

 

5. Remove pan from heat. Let bubbles subside, then pour over nuts. Cool and set.

 

6. Process praline to fine crumbs. Serve praline sprinkled over vanilla

ice-cream. Store any leftover praline in an airtight

container in the freezer.

 

 

 

 

VARIATION: You can break praline into shards instead of processing.

 

ALTERNATE SERVING SUGGESTION: Serve leftover praline sprinkled over baked fruit

and cakes.
