Guest guest Posted January 4, 2010 Report Share Posted January 4, 2010 Tofu Tacos ---------------------- Preparation: 5 minutes Cooking: 15 minutes ---------------------- 600 g (21 oz) silken firm tofu 4 teaspoons olive oil 4 green onions, chopped 2 cloves garlic, chopped 1/2 medium green capsicum (bell pepper), chopped 300 g (10 1/2 oz) jar medium-hot chunky tomato salsa 4 teaspoons lime -OR- lemon juice 1/4 cup chopped fresh coriander (cilantro) salt and pepper, to taste 6 taco shells, warmed, to serve shredded lettuce grated vegan tasty cheese, chopped tomato chopped avocado, to serve 1. Drain tofu; pat dry on paper towels. Crumble tofu into a microwave-safe bowl; cook on High (100%) for 2 minutes. Drain well through a sieve. 2. Heat oil in a medium frying pan over moderate heat. Cook onion, garlic and capsicum (bell pepper) for 3 minutes. 3. Add tofu; cook and stir for 5 minutes. 4. Stir in salsa, juice and coriander (cilantro). Season with salt and pepper. Reduce heat; simmer, uncovered, for 5 minutes. 3 Fill taco shells with tofu mixture. Serve at once with lettuce, cheese, tomato and avocado. Serves 6.
