Guest guest
Fruited Iced Tea --------- Preparation: 10 minutes + 3 hours to chill --------- 4 teaspoons orange pekoe -OR- earl grey tea leaves 8 teaspoons sugar 3 cups ruby red grapefruit juice 8 teaspoons passionfruit pulp (around 2 passionfruit) crushed ice, to serve 1. Place tea leaves in a large heatproof bowl; add 3 cups boiling water and steep for 5 minutes. Strain tea into a large jug. 2. Add sugar to tea, stir until dissolved. Chill for 3 hours. 3. Stir in fruit juice and passionfruit. Serve over crushed ice. NOTE: Don't steep tea/or too long; after 5 minutes, the brew becomes bitter. VARIATION: Instead of grapefruit juice, try your favourite fruit nectar, such as apricot, peach or guava. Serves 6.
