Tomato & Capsicum Relish

Preparation: 15 minutes

Cooking: 50 minutes

680 g (24 oz) jar marinated red peppers

4 teaspoons vegetable -OR- olive oil

1 small red onion, finely chopped

2 cloves garlic, crushed

1 cinnamon stick

3 teaspoons cumin seeds

1/4 teaspoon dried chilli flakes

6 roma tomatoes, chopped

1/3 cup red wine vinegar

1/4 cup firmly packed brown sugar

 

 

1. Drain peppers, reserving marinade; chop peppers coarsely.

 

2. Heat reserved marinade and the oil in a heavy-based saucepan over moderate

heat. Add onion, garlic and spices; cook and stir for 5 minutes or until onion

is soft.

 

3. Add peppers, tomato, vinegar and sugar. Cook; stirring occasionally, for 45

minutes or until thickened.

 

4. Cool. Remove cinnamon stick. Cover with plastic food wrap; store in fridge.

 

 

 

SERVING SUGGESTION: Serve over pasta.

 

 

 

Makes about 2 cups.
