Guest guest Posted December 30, 2009 Report Share Posted December 30, 2009 Was fortunate enough to have someone make us gluten-free, vegan chocolate chip cookies using the " BabyCakes " recipe from Erin McKenna's book and we were ABSOLUTELY blown away. I have not ever tasted cookies this terrific--before or after being vegan and gf! I have made my share of successful and tasty vegan desserts and gf desserts but these use coconut oil, xanthan gum, flax meal and applesauce in the mix and I think that must have made all the difference. (That being said, these were also the most EXPENSIVE cookies ever!! Definitely a once-in-awhile indulgence) Anyone who would like to see the recipe, let me know and I can post it. I'm trying to gather a nice variety of cookies and baked goods so I can make up a nice tray for a friend of mine and his wife. These sound really good! Thanks.
