Guest guest Posted December 30, 2009 Report Share Posted December 30, 2009 Avocado & Mixed Tomato Salsa ----------------------- Preparation: 15 minutes ----------------------- 2 large avocados, finely chopped 250 g (9 oz) yellow grape tomatoes, halved 250 g (9 oz) red grape tomatoes, halved 1 small red onion, finely chopped 1/2 cup chopped fresh coriander (cilantro) 8 teaspoons lemon -OR- lime juice 4 teaspoons vegetable -OR- olive oil salt, to taste 1. Combine avocado, tomato, onion and coriander (cilantro) in a medium bowl. Season with salt. 2. Whisk juice and oil in a small bowl. 3. Add dressing to salsa; toss to combine. Serve at once. Serves 8.
