Almond & Mint Peas

Preparation: 10 minutes

Cooking: 15 minutes

40 g (1 1/2 oz) vegan margarine -OR- oil

1 medium red capsicum (bell pepper), finely chopped

1 kg (2 1/4 lb) frozen peas

1/4 cup finely chopped mint leaves

1/2 cup flaked almonds, toasted

 

 

1. Melt margarine (or heat oil) in a medium frying pan over moderate heat. Add

capsicum (bell pepper); cook and stir for 5 minutes or until soft. Remove from

heat.

 

2. Meanwhile, cook peas in a large saucepan of boiling water for 5 minutes or

until tender. Drain. Place peas in a large heatproof bowl.

 

3. Add capsicum (bell pepper) and mint to peas; toss until well combined.

 

4. Sprinkle with almonds. Serve at once.

 

 

 

NOTE: Prepare all ingredients before cooking peas; cook close to serving time.

 

VARIATION: Add corn kernels for extra flavour and colour.

 

 

 

Serves 8.
