Guest guest Posted December 22, 2009 Report Share Posted December 22, 2009 My dish for Christmas started with a vegan version of colcannon, something I have been doing without knowing it was a traditional Irish dish. (Mashed potatoes with cabbage, perhaps baked.) The Scottish/Irish Canadian version uses carrots and turnips instead of the cabbage, while I have used broccoli, then adding carrots. I was going to this with red kale (saw some at Whole Foods) but can't stop creating. Instead of doing a 'casserole,' I might try it with a few other veggies in corn enchiladas, and some mashed bananas to lighten the potatoes, which I might call my 'Irish Enchiladas.' Or maybe even a " cheese " sauce, if you have a a safe one you like. I'm thinking of stuffing a squash with some wild rice and mushrooms. Not feeling all that creative this year, but being Native American, it would be a traditional dish as well! lol Good luck and have a nice holiday!
