Egg-free pancakes

To those who have been looking for a good egg-free pancake, we tried

out these teff banana pancakes tonight, and they are wonderful:

I didn't put any maple syrup in them, because we just put maple syrup

or preserves on top anyway, and they were still very sweet. DS says

they would be great with chocolate chips.

 

Follow the directions - don't add extra liquid, even though they are

unbelievably thick. They will work out! Nice and crispy outside,

cooked through and fluffy not gooey.

it was raining buckets this AM here in Southern Cal so we tried out the Teff

Pancakes and they were wonderful. I didnt have banana so we used applesauce and

we ground our teff in a coffee grinder I save for grain to make it flour. I used

a caphalon non stick griddle and brushed it sparingly with coconut oil between

batches. I did not use the 2 tbsp oil in the recipe figuring the applesauce was

wetter than banana.

 

Thank you for the heads up - this recipe is a keeper.
