Tjhe deposits interfer with absorption of nutrients. Animal products are the only source of pre-formed collagen (connective tissue), which we do not need because the human body is equipped to make its own from plant foods. Although the research suggests that the majority of these people are also gluten intolerant, it seems to me that to stop consuming collagen would also make sense.
