I can choose different widths and they are very reasonable, costing a little over a dollar in most cases. I stock up and use them in all kinds of great vegan GF recipes. They take far less time to cook, and the biggest danger is you'll over cook them. So I take them out before they are even al dente and they are perfect. Make sure you salt the water just like you would with wheat pasta's. I use them in all kinds of vegan pasta sauces, vegan cheese, vegan alfredo, mushroom, bolognese (lentils), etc I even take a fast further by eliminating night shades, sugar, and both soy and corn, which can play havoc if you are suffering gut problems.
