Guest guest Posted November 15, 2009 Report Share Posted November 15, 2009 Carrot Hommos 8 teaspoons vegetable -OR- olive oil 1 teaspoon ground cumin 1 teaspoon ground coriander pinch of dried chilli flakes 2 large carrots, thinly sliced 2 cloves garlic, peeled 400 g (14 oz) can chickpeas (garbanzo beans), rinsed 4 teaspoons tahini 4 teaspoons lemon juice salt and pepper, to taste 1 Preheat oven to 180 C (350 F). 2. Line a large baking tray with non-stick baking paper (parchment). 3. Combine 4 teaspoons oil, cumin, coriander, chilli, carrot and garlic in a large bowl; toss to coat. Place mixture on prepared tray. Roast for 20 to 25 minutes or until carrot is golden brown and tender. Set aside for 20 minutes to cool. 4. Process carrot mixture, chickpeas, tahini, juice, remaining oil and 8 teaspoons hot water until well combined. Season with salt and pepper. Serves 6.
