Marinated Olives

 

 

1 cup black olives

1 cup green olives

2 strips lemon rind, thinly sliced

2 strips orange rind, thinly sliced

2 garlic cloves, thinly sliced

1 green onion, finely chopped

1/4 cup extra-virgin olive oil

2 fresh thyme sprigs

 

 

1. Place olives, lemon rind, orange rind, garlic, onion, oil, and thyme in a

bowl.

 

2. Set aside for 4 hours, stirring occasionally, to allow flavours to develop.

Serve.

 

 

 

NOTE: Store in an airtight container in the fridge for up to 1 week. Bring to

room temperature before serving.

 

 

 

Serves 8.
