The major differences are that carob lacks all the narcotics contained in chocolate, and carob is naturally (mildly) sweet whereas cocoa is bitter. If a person is expecting chocolate, carob will be a serious disappointment. It does however, make a nutritious addition to ones diet, as itself. I happened to try raw carob once, which I totally don't recommend. I thought it was gross. The roasted stuff, which is more common, is MUCH better, in my opinion. The only time I have had carob was when I was growing up my friend's mom would make carob chip cookies and I just remember they were nasty.
