Congratulations! Agave is a wonderful discovery! According to the Glycemic

Index, it is about the lowest thing in our diet. It's lower than fruit, veggies,

legumes and grains! Amazing, isn't it!

It doesn't sound very tempting but I made one and served it with raspberry

coulis...

" Hot carob cake with raspberry coulis " sounds nicer.

It was totally delicious, served hot and I'd be happy to give anyone the

recipe if they're interested?

Best of all, my first real experience cooking with agave and it did not

elevate my blood sugar, I am actually amazed and delighted, it seemed to good to

be true! I ate three small pieces and still feel normal.

Hurrah! Cake for everyone.
