It's lower than fruit, veggies, legumes and grains! Amazing, isn't it! http://www.elitefitness.com/articledata/glycemic.html Here's just a small sample from the Index: Agave Nectar 14 Cherries 32 Lentils, red 36 Soy milk 43 Rice, brown 79 Millet 101 Deborah It doesn't sound very tempting but I made one and served it with raspberry coulis... " Hot carob cake with raspberry coulis " sounds nicer. It was totally delicious, served hot and I'd be happy to give anyone the recipe if they're interested? Best of all, my first real experience cooking with agave and it did not elevate my blood sugar, I am actually amazed and delighted, it seemed to good to be true!
