I used flax seed gel instead of the eggs and quinoa flakes instead of the bread crumbs. I also used red and not green pepper. they were delish. I made up two batches, one as is for the adults and one with substantially less chili for the kids. I need not have bothered wth the kid version as despite the huge amounts of spice in this recipe, the full amount is not too spicy for the children. they tasted particularly good with mango salsa or with avocado. http://allrecipes.com/Recipe/Homemade-Black-Bean-Veggie-Burgers/Detail.aspx I also baked them instead of frying them. I baked them for slightly longer than the recipe recommends as I didn't want them breaking when I flipped them. I loved how quick this was to make and how low fuss it was. Important point, make sure you squeeze out the liquid from the onions and peppers as some of the comments suggest.
