Guest guest Posted September 1, 2009 Report Share Posted September 1, 2009 I have a recipe for a walnut burger that calls for both egg and breadcrumbs for binding - I know I can substitute flax and water for the egg, but what kind of substitution for the breadcrumbs? Guest guest Posted September 1, 2009 Report Share Posted September 1, 2009 What about rice? I would try the vegetable puree in place of the flax. Flax tends to make patties gummy, in my experience. I would add ground flax and the veggie puree instead.
