Pamela's bread mix is my favorite. But so far, my best cakes have come from the Betty Crocker mixes. Later today, I'm going to try substituting baby food squash for the 3 eggs required in the yellow cake mix. Last time, I substituted lemon juice for half the water in it, and added lemon zest. Oh, and thanks for the heads up on the cake mixes, I only get the baking mix. My husband's favorite was made by mixing 1 package yellow cake mix with a 20oz can of crushed pineapple, 1 tablespoon vanilla and egg replacer for 2 eggs. My favorite was made by mixing one package devil's food cake with a 20 oz can of cherry pie filling, 1 tablespoon vanilla, and egg replacer for 2 eggs. My daughter's was made by mixing one package devil's food cake with a can of pumpkin, 1 tablespoon vanilla, 1 teaspoon cinnamon, 1/2 teaspoon allspice, egg replacer for 2 eggs and additional rice milk to get the consistency right. we leave out the oil/butter and replace the eggs. These cakes made this way are very moist, don't have that funky gf smell and taste and stay fresh for days.
