Guest guest Posted August 7, 2009 Report Share Posted August 7, 2009 Pumpkin & Chive Mash 600 g (21 oz) golden potatoes 1 kg (35 oz) butternut pumpkin (squash), peeled, chopped 8 tsp vegan sour cream salt and pepper, to taste 8 tsp roughly chopped fresh chives 1. Cook potato in large pan of boiling salted water for 12 to 15 minutes, adding pumpkin to the pan for the last 8 minutes of cooking, or until tender. Drain. 2. Return potato and pumpkin to pan over low heat. Add sour cream. Mash until smooth. 3. Season with salt and pepper. Stir in chives. Serve. Serves 4.
