If I need it for a cold salad (I use it to make Tabouli), after it finishes cooking, I spread it on a cookie tray, balance it on top of a large bowl filled with ice and water and let it sit for about 20 minutes. It cools off really fast. Sometimes I'll slide the tray into the freezer for 10 minutes or so.
