Question about cracker recipes...

There are two recipes in the archives that I would like to try however, both

call some sort of seed and/or nut and we can't do either. Below are the

recipes. I'm most likely going to try the 2nd one cause the 1st one I have to

sub the rice and the cornmeal already. Anyway, my question is...would the

recipe(s) still work if I just removed those two types of ingredients? Or would

it be a disaster? Or would I need to replace them with something...should I

replace with Xgum?

 

 

Crackers or Pie Crust

1 cup quinoa flour -OR- quinoa flakes, ground

1 1/2 cup rice flour

1 1/2 cup fine cornmeal

1/3 cup sesame -OR- sunflower seeds, ground

1/3 cup walnuts

1 1/2 cups water, scant

 

Quinoa Crackers

These make great snacks, as well as being good with a simple soup or salad meal.

3 cups quinoa flour

1 cup tapioca flour

1/4 cup sesame seeds

2 tsp baking soda (bicarbonate of soda)

1/2 tsp unbuffered Vitamin C crystals (-OR- lemon juice)

1 tsp salt

1 1/4 cups water

1/2 cup oil
