I replaced the lard in the recipe w/ palm oil (spectrum veg. shortening). I've also been making them into crackers by rolling the dough super thin (on parchment paper), cutting them into small cracker sized squares prior to cooking, putting them in the oven leaving them on the parchment paper on top of a cookie sheet and then baking in the oven until they are crisp (a/b 20 minutes). I sprinkle w/ salt when they are done. They are delicious!! I've made them w/ br. rice flour in place of the tapioca flour, and another time w/ potato starch. I've found a new protein rich crispy snack food in these, and am just loving them and wanted to share! They are yummy w/ salsa, hummus, bean dip, you name it!
