Guest guest Posted April 13, 2009 Report Share Posted April 13, 2009 Potato & Tomato Dhal 1 large onion, finely chopped 3 cloves garlic, crushed 3 cm (1 1/2 " ) piece fresh ginger, finely grated 1 fresh long red chilli, seeded, finely chopped 4 teaspoons vegetable oil 1 large potato, chopped 350 g (12 1/3 oz) sweet potato, chopped 3 medium tomatoes, chopped 1 teaspoon garam masala 1 teaspoon ground turmeric 1 1/2 cups red lentils, rinsed 2 cups vegetable stock 1. Process onion, garlic, ginger, chilli and 4 teaspoons of water until smooth. 2. Heat oil in a large saucepan over moderate heat. Cook and stir onion mixture, potato, sweet potato, tomato and spices for 5 minutes. 3. Add lentils and stock. Cover and bring to the boil. Reduce heat; simmer, stirring occasionally, for 25 to 30 minutes or until lentils are tender and sauce thickens. VARIATION: In place of spices use curry powder. Serves 6.
