English muffin rings

I'm so excited. I've had trouble getting bread loaves to not collapse

on cooling, so I've been trying to make sandwich buns. Finally, I

bought some Fox Run English muffin rings (from Amazon, about $1 apiece)

which are 3-1/2 inches in diameter. I put them on a cookie sheet,

lightly sprayed olive oil over the whole thing, and used a half a recipe

of Pamela's bread mix to fill them. They came out great. Just right

for sandwiches or for the toaster. So far, I assembled all my sandwich

fixings, ate the middle as a salad, and toasted the buns to eat with

" butter " ! When the novelty wears off, I'll use them for sandwiches, I'm

sure.
