We don't eat soy, we're generally trying to be nightshade-avoidant (though I can't resist the occasional bit of tomato), and we're focused on whole grains for our starches. We're in Georgia and eat pretty seasonally---eat as locally as we can. Do you have any meal suggestions for what I should make for a meal tomorrow or Sunday? Easy or complex---either is fine. What's one of your favorite spring meal plans? Favorite spring recipes? I may plan a picnic for one of our meals if the weather will cooperate. We're fortunate in that we have strawberries in season in the South Georgia already, so I will be making at least one of the dishes with strawberries in the next couple of days. I love reading people's ideas on here, so I just thought I'd throw this out there. Guest guest Posted April 11, 2009 Report Share Posted April 11, 2009 Asparagus is in season here, so I've been doing a lot of asparagus dishes to use up what we have. Last night I made an asparagus stirfry from allrecipes.com. It was basically asparagus stirfried in olive and sesame oil, sprinkled with ginger and soy sauce. It also included 1/2 a cup of cashews. I added some chopped green garlic, spring onions and a julienned carrot. It looked gorgeous and was the best way I've eaten asparagus this season. Guest guest Posted April 11, 2009 Report Share Posted April 11, 2009 You could make spring rolls, which are like egg rolls but made with rice wrappers and stuffed with veggies and some people put thin rice noodles in them. I like to use carrots, zucchini and mushrooms, but any combination of veggies you like will work. I fry them in some olive oil, but any oil you like will work. I imagine you could bake them if you don't use oils. For dipping sauces, you could make up a syrup consistency dipping sauce by cooking down some fruits with some water and agave or raw sugar. Apricot or raspberry is really good. Another idea is to grill some thin eggplant (or zucchini) slices and once they are cool wrap them around some cashew " goat cheese " , put them on a bed of spring mix and drizzle with raspberry sauce. There's a recipe for cashew goat cheese in the new vegetarian times magazine, and some other vegan nut cheeses too! (Not sure where I left the magazine right now but I'll post the cashew goat cheese recipe later.) These ideas are more appetizers. I love soy and nightshades so that's the first things I think of! My brain is still searching though so if I think of something I'll let you know! Good luck!
