My 12 year old daughter and myself are coeliac so have been on a gluten free diet for 7 years now. My 15 year old decided to go vege. two year ago. I didn't mind as she never liked the taste of meat even as a baby and her ethical resons were strong. Now she has taken the next step and wants to be vegan. I have researced it as I want her to be as healthy as she can be. She has actually been eating better this last week than she has in ages (I told her if she went vegan she had to be responsible and eat breakfast which she wasnt ect) As I knew this day was coming I had bought a book and have been experimenting. So far so good. I made these muffins a few days ago which the kids loved as they were like a dense mud cake. It went as follows. 2 Bananas 1 avacado 3/4 cup brown sugar 3 tablespoon cocoa 1 cup plain g/f flour Put all in food processor, put in patty cake pans and cook until firm. I acutally meant to put s/r flour in but didn't. As the kids loved them I would actually leave as is. Look forward to reading past posts and looking at recipes. Oh, I am in Australia so not sure that I will have all your ingreadents avaliable to me but will try to improvise. Thanks for the recipe it sounds delicious ... I'll add it to our Files. Our " Files " have 1000s of recipes and all have metric conversions and Aussie equivalents added to them. The main thing to watch for is the tablespoon measurements. An Australian standard tbsp is 4 tsp whereas everywhere else in the world it is 3 tsp. I do put the number of tsp or ml beside all tbsp measurements. (Look in ***Recipes Posted to VGF*** ) In addition, if you do happen to find an ingredient that is unfamiliar, in the " Database " section we have a list of alternate names for ingredients, such as: molasses = treacle (not blackstrap molasses) cilantro = fresh coriander garbanzo bean = chickpea /database There are some conversion tables in the " Files " also. And, in the recipe folder there is a file called " Abbreviations, Measurements, Australian notes, etc. " Hope you enjoy being a member here.
