Guest guest Posted March 24, 2009 Report Share Posted March 24, 2009 Hi all, I'm still fairly new at gluten free vegan baking, but have had some successes that I wanted to share. For example, last week I made a Breads From Anna Herb Bread (from a mix) in my bread machine. I used flaxseed meal and water instead of eggs and it came out great. Today I made a Bob's Red Mill Homemade Wonderful Bread Mix (that's what it is called on the package)and I used a combination of flaxseed meal (1 tbsp) and water (3 tbsp) and then for the rest of the egg needed I used soy yogurt. The bread came out perfect. Last night, I made flatbreads and again used a combo of the flaxseed meal/water and soy yogurt - again, perfect. So, for those of you wanting to try using egg replacements, I just wanted you to know that I'm having a lot of success. In a way, it's like relearning how to bake from scratch! I have a set of donut pans and thought the pan for solid donuts (no hole) would work for buns. Has anybody tried this? I'll try your egg sub method and see how well the buns work out. I also thought of trying to make bagles with the cinnamon raisin bread mix (Bob's red mill) and the regular hole donut pan. To make them more bagle like I'd have to experiment with it, but I think it could work. Any ideas?
