Guest guest Posted March 22, 2009 Report Share Posted March 22, 2009 I'm passing this on because someone was asking about muffins before. This recipe calls for eggs and buttermilk. We have lots of egg alternatives. For buttermilk in recipes I like to use soy yogurt. Lately I've been using yogurt made with coconut milk, which is really good in baked goods. I haven't tried experimenting with this recipe yet as I just got it and I've been sick/not eating for days! If anybody does have success with this please post your alterations.
