Guest guest Posted February 24, 2009 Report Share Posted February 24, 2009 Mofóngo - Typical Puerto Rican Dish Source: 3ABN.org 2 green plantains, peeled, sliced, boiled and mashed while hot 2 cloves garlic, minced salt to taste extra virgin olive oil to taste 3 - 5 garlic cloves, minced 1 tsp. salt 1/2 c. catsup 1/4 c. Veganaise Combine mashed plantains and 1 or 2 cloves minced garlic, salt and olive oil to taste. Combine remaining garlic, one tsp. salt, catsup and Veganaise. Spoon over top of plantain mixture.
