Guest guest Posted February 22, 2009 Report Share Posted February 22, 2009 Vegan Lasagna This is my favorite lasagna recipe and is generally well accepted by children. one 1 lb (450 g) package of brown rice lasagna noodles, cooked (may use non-rice brands of gf pasta) one 32 oz (950 ml) jar of spaghetti sauce (such as Classico) 1 package plain tofu, firm (optional) - may substitute vegetables like steamed zucchini 2 small cans sliced olives Cheesy Sauce: 2 cups water 1 cup cashews, raw 6 cloves garlic 1/4 tsp turmeric 1. Combine " cheese sauce " ingredients together in a blender. 2. Layer noodles, sauce, and crumbled tofu. Pour a portion of cheesy sauce over the top. Repeat the process one or two more times (depending upon the shape and size of your casserole dish; a 13 x 9 " (23 x 33 cm) pan works best). Top with sliced olives. 3. Bake 350 degrees F (180 C) until the casserole is hot and bubbly. To rewarm, mix together one 8 oz (225 g) can tomato sauce and 1 cup water.
