Her comments offer an explanation for why I tended to get a head ache from MSG.... Almost everything we eat contains glutamate. It's a naturally occurring amino acid and the human body needs it to function. Artificial glutamate in the guise of msg is an excitotoxin that our body does not detox so it affects the brain which cannot control cell wall permiability. Perhaps soy bothers you as well. We have a japanese scientist (Kikunae Ikeda of the Tokyo Imperial University) to thank for msg, and it's really only been around since 1908, when he claims to have identified the 5th taste on the tongue which he called " nummy " or in japanese, umami. BTW MSG is not the end of it in synthetic form, commercial companies also add one or more of 5 ribonucleotides such as guanosine monophosphate (GMP) and inosine monophosphate which reported to intensify the tongues recognition of glutamic salts. He is technically correct in that the tongue can distinguise the taste of carboxylate anion of glutamic acid, a naturally occurring amino acid common in meats, cheese, broth, stock, and other protein-heavy foods. Below is a quote from wiki explaining how MSG works as an excitotoxin on the brain: " *Umami tastes are initiated by specialized receptors, with subsequent steps involving secretion of neurotransmitters, including adenosine triphosphate (ATP) and serotonin. Other evidence indicate guanosine derivatives may interact with and boost the initial umami signal. These taste receptors are located everywhere on the tongue.* " ATP has been the recent subject of stuying in Great Britain and is implicated in seasonal, if not all, mood disorders.
