POTATO PANCAKES

 

1 tablespoon of flour

1 tablespoon fresh parsley or dried parsley

1/4 teaspoon of salt

1/4 teaspoon of baking powder

1/8 teaspoon of black pepper

1 pound baking potatoes, it's 2-3 medium sized

1/4 cup chopped onions

1 egg yolk beaten

cooking oil

 

Combine flour, parsley, salt, baking powder and pepper, and set aside.

Peel and shred potatoes to make 2 1/2 cups. Rinse with cold water, drain well. Stir potaoes and onion into the flour mixture and blend. Stir in egg yolk and mix well.

Heat skillet and add 2 tablespoons of oil over medium heat. Drop 1/4 cup of potato mixture onto skillet and with back of spoon spread to make 3 inch circle. Drizzle the top with a small amount of oil. Brown and turn over and brown the other side.

Ok, we were out the other night and my husband had a huge gluten craving... We

saw a pile of potato pancakes and he wanted some... BAD!? Some yesterday I made

the yummiest gluten free pancakes!? Here's the recipe!? (If you can call it that

without measurements)

 

about 12 med sized potatoes, grated in the food processor.? (Had to do this in 2

loads)

1 large onion grated in food processor

2 cups millet flour

salt to taste (maybe a couple of tablespoons?)

 

Mix it all up, add a little water to make it a good patty-texture if you need

to.? Make patties with your hands, and fry them up!? When they're done, pour

ketchup on them!? Mmmmm!
