Guest guest Posted February 4, 2009 Report Share Posted February 4, 2009 Hi, I'm Karen, and I have been gluten free since April 2007, when my cousin was diagnosed with Celiac Disease. His symptoms were the same as mine, so I decided to eliminate gluten from my diet to see if I would feel better. It only took 4 days of eating gluten free for me to see an enormous difference in the way I felt. Last night my husband and I watched a documentary on Free Speech TV, I think it was called Healing Cancer From Within, or something similiar to that. It was VERY interesting and an eye opener for us. He has had cancer of the tongue, had surgery and radiation treatments for it. He has been cancer free since 2001, but has had a lot of problems as a result of the treatments he received, the biggest of which is that the radiation killed his thyroid and salivary glands. So, today our conversations throughout the day have been trying a vegetarian diet, and how to make sure we get the nutrients we need from such a diet. I know it will be hard to make the transition, but something we can do. Since I am the cook, I only cook gluten free, so he eats a gluten free diet for the most part (I do let him buy cookies and bread occasionally).
