Guest guest Posted February 3, 2009 Report Share Posted February 3, 2009 Hi. My name is Emily Thubbron. I am 36, married, and one daughter. I am a diabetic and overweight. We want to have more children, but I also have PSOC. I started, in January, switching over to a mostly vegetarian lifestyle. I stopped drinking soda...Diet Dr. Pepper was my friend. I also stopped all the junk food for the most part. Cheetoes were my downfall. They are as bad as lays potatoe chips, you can't eat just one.... I am really enjoying learning new ways of cooking, new recipies and meeting others who adopt this lifestyle also. It is hard for me because we are a one income family and some of the grocery items are rather expensive. I am doing my best though. Spring and summer are great because I can hit the farmer's markets, but we suffer here in NE Pa in the fall and winter. I am not completely vegan or completely vegetarian because we still eat fish and chicken. Mostly for my husband's benefit. I don't think he would be willing to cold turkey with no meat at all. We also still eat eggs and cheese. With my diabetes, I have found that bread, milk, and some other things send my sugar sky high. I am trying to find substitutes for flours that I can use to make some breads and such. Milk isn't a big deal because I use soy milk or rice milk for cereal and cooking.
