Guest guest Posted February 1, 2009 Report Share Posted February 1, 2009 White Bean Salad 400 g (14 oz) can cannellini beans, rinsed 2 small ripe tomatoes, finely chopped 1 ripe avocado, finely chopped 1/2 cup finely chopped flat-leaf parsley 1/4 cup finely chopped chives 1/4 cup finely chopped basil 8 teaspoons lemon juice 8 teaspoons vegetable oil 2 teaspoons wholegrain mustard 1 clove garlic, crushed 1. Combine beans, tomato and avocado in a large bowl. 2. Combine herbs, juice, oil, mustard and garlic in a medium bowl. 3. Stir dressing through bean salad. Serves 4.
