Guest guest Posted January 31, 2009 Report Share Posted January 31, 2009 Grilled Mango in Ginger Syrup 2/3 cup sugar 5 cm (2 " ) piece fresh ginger, peeled, thinly sliced 1 fresh small red chilli, halved lengthwise 2 teaspoons finely grated lime zest 4 teaspoons lime juice 4 ripe mangoes 4 scoops vegan mango -OR- passionfruit ice-cream, to serve 1. Stir 1/2 cup sugar with 1/2 cup water, ginger and chilli in a small saucepan over low heat until sugar dissolves and mixture boils. Reduce heat; simmer for 5 minutes or until mixture thickens slightly. Remove from heat. Stir in zest and juice. 2. Preheat a char-grill pan over high heat. Using a small sharp knife, remove cheeks from mangoes. Sprinkle cut sides of mango with remaining sugar. Grill mango, cut side down, for 5 minutes or until brown. 3 To serve, arrange mango on plates; drizzle with syrup. Serve at once with ice-cream. BUDGET TIP: Serve leftover syrup on banana pancakes.
