Guest guest Posted January 31, 2009 Report Share Posted January 31, 2009 Nibble Mix 250 g (9 oz) raw peanuts 1/2 cup sunflower seeds 2/3 cup pepitas (pumpkin seeds) 8 teaspoons GF soy sauce pinch Chinese five spice powder 70 g GF mini pretzels 1. Preheat oven 140 C (285 F) or 120 C (250 F) for fan forced. 2. Line a baking tray with non-stick baking paper. 3. Combine nuts, sunflower seeds, pepitas, soy sauce and five spice powder in a medium bowl. Spread mixture evenly on prepared tray. Bake, stirring occasionally, for 20 minutes or until roasted. Cool mixture on tray for 10 minutes. 4. Place pretzels in a serving bowl; stir in cooled nibble mix. BUDGET TIP: Buy nuts in bulk. Store in freezer/or up to three months so they don't go stale. TIP: If spice is unavailable, add 1/2 teaspoon curry powder. TIP: Store nibble mix in an airtight container for up to 3 days. Serves 6.
