I'm sorry I haven't introduced myself yet, but life has been very hectic and stressful over the past while, since I've joined. [:-s] My name is Siobhan, and I'm a proud vegan mum of two very healthy, vegan-since-birth children who are thriving on the only human appropriate diet ... as are the children of vegan friends, who have also been raised on this diet since birth. While learning about veganism years ago, and about why it's the only truly biologically appropriate diet for our bodies, I have also learnt that wheat isn't a natural food for us, as it can't be digested in its natural state. Gluten in wheat causes a lot health problems in people due because of this, just as any animal " foods " do... because they are not appropriate. Our bodies are not made to handle and process them, or the saturated fats they contain, which cause the plaque that builds up in the coronary arteries and the arteries leading to the human brain, in turn causing heart attacks and strokes. Back to the gluten issue, though... we have gluten sensitivities in our family, as many people probably do, without even realising it. This led me to seek information about other grains, from which flour is made which would be suitable for baking breads... and hence, to this group. I was thankful to find this group, although I cannot understand why some of the recipes have eggs, when this is a vegan group? Surely, there must be some mistake there... ....otherwise, it looks like a great resource, for bread machine recipes! [] I would appreciate hearing from any of you who have tried out some of these gluten and egg free recipes for baking bread, especially those for using in the automatic bread machines. Please post and tell us all which recipes and grains you have found most suitable for baking bread... I'm sure there are probably a lot of members who are anxious to know this. I do apologise if that has already been discussed in past message posts, and I have somehow missed it! I would just like to explain the reason you may find " Eggs " listed as an ingredient in a few of the recipes. All of the these do have a vegan alternative written in brackets next to the eggs or are written as " X number of eggs, replaced " . I did leave them this way intentionally for 2 reasons: Firstly, this is the way the recipe was originally written and I think it is disrespectful to alter the recipe. Also, many copyrights do state that they don't mind the recipes being shared as long as it is included the way it is written. The second reason is that I for one, like to know what it is I'm trying to substitute for. And everyone, or at least those that have been cooking this way for a while, has their own unique way of substituting ingredients such as eggs. (Heaps of egg replacer options can be found in the Egg Substitute folder.) The majority of recipes that do have eggs as an ingredient are bread recipes. Bread is the hardest product for many gluten-free people, let alone vegan and gluten-free, to replace. What works for one doesn't necessarily work for another. Therefore, as many bread recipes as possible are included to allow each individual to find a recipe that will suit them, in whichever way they choose to substitute ingredients. My family's favourite bread is " Multi-Grain Bread (*SF)(TNT) " which I always make from " Multi-Grain Bread Mix (*SF)(TNT) " . I also have a large tub of " Besan Bread Mix (*SF)(TNT) " on hand for making " Raisin Bread Using 'Besan Bread Mix' (*SF)(TNT) " , " Apricot & Almond Bread Using 'Besan Bread Mix' (*SF)(TNT) " , a Subway type of roll, or " Olive and Garlic Rolls (*SF) " .
