I don't have a title for this yet and I thought of some variations

that I'll discuss in a bit, but so far, this is my dinner creation...

 

1 cup chicken NOT! strips (dixie diners club) prepared according to pkg.

1 red pepper chopped

1/2 red onion chopped

1 can corn, drained

1 cup rice + 1 1/2 cups water (or as the package instructs)

3 tsp curry powder (mild flavor. use more if you like it spicy)

a little olive oil

sea salt and pepper to taste

 

I made the " chicken " first so I could just throw it in the mix at the

end and not worry about it while cooking everything else.

Cook the rice with the curry powder.

Saute onions and peppers in olive oil. (I start with the peppers as

they take longer and I like them really done.) when the peppers and

onions are just about done, add in the corn so it can roast up some.

Once everything is done mix it all together with some salt and pepper.

Serve hot.

 

Alternative variations:

For soy allergic use beans instead of the chicken not! strips.

 

For a Mexican version, use black beans and Mexican spices instead of

curry. (Possibly omit chicken not! strips. Your choice!)Optionally add

some shredded vegan cheese.

 

Omit corn if allergic. Use quinoa if rice allergic.

 

Use tofu in place of chicken not! strips.

 

Any other ideas for variations welcome! This made a lot! I would say

easily feed 6 people, possibly even 8! Lots of left overs for me! I

put half the left overs in the freezer for some night when I don't

feel like cooking, so I'll find out how well it freezes too! Enjoy!
