It won't affect the texture and you probably won't be able to tell the difference. Guest guest Posted January 27, 2009 Report Share Posted January 27, 2009 I LOVE Bob's Red Mill gluten free pancake mix, and my boyfriend (who isn't gluten free/celiac love it too) We use EnerG egg replacer. It's in powder form and works perfectly..I've never had any issues with it.
