I have been happily eating gluten free for almost 20 years, and mostly used guar gum for baking because it works well and is so much cheaper. Recently, I decided to fork out the bucks for the xanthan to see if it might be better, or whatever. I was using it often, and also began having trouble with some symptoms, but I didn't connect the two initially. Then somewhere recently, I read that xanthan gum may be a problem for some people. I gave it some thought, then undertook a withdraw/add-in test with it a couple of times over the past couple of weeks and the results have been consistent and clear. It was apparently bothering me, BIG time. What a relief! I was getting really fed up with it. An interesting part of the process of solving the mystery is that when I was using the xanthan and suffering the symptoms, my usual motivation and interest in baking dwindled away! Body Wisdom speaks loud and clear! Now that I'm back to using guar gum again, I'm back to my ol' happy-in-the-kitchen self.
