Avocado & Corn Salsa

 

 

2 corn cobs, husk and silk removed

1 large ripe avocado, finely chopped

1 small red onion, finely chopped

1 fresh long red chilli, seeded, finely chopped

4 teaspoons olive oil

coriander (cilantro) leaves, to garnish

salt and pepper, to taste

 

 

1. Place corn cobs on microwave-safe plate. Cover with plastic food

wrap. Microwave on High (100%) for 4 to 5 minutes or until tender.

Let cool slightly; cut kernels from cobs. Place kernels in a large bowl.

 

2. Add avocado, onion, chilli and to corn. Season with salt and

pepper; stir to combine.

 

 

 

TIP: To prevent avocado discolouring, drizzle with 4 teaspoons lemon

juice.

 

 

 

Serves 4.
