Guest guest Posted January 1, 2009 Report Share Posted January 1, 2009 Bircher Muesli - Preparation: 10 minutes + overnight to soften - 1 1/3 cups certified GF rolled oats 1/4 cup dried cranberries, finely chopped 1/4 cup dried apricots, finely chopped 1 cup unsweetened apple juice 1 cup soy vanilla yogurt 120 g (4 oz) frozen blueberries, thawed 1 apple, unpeeled, finely chopped 8 teaspoons toasted flaked almonds 1. Combine oats, cranberries, apricots and juice in a medium glass bowl. Cover with plastic food wrap; chill for 6 hours or overnight to soften. 2. Stir in yogurt and blueberries. Divide among serving bowls; top with apple and almonds, then serve at once. TIP: You can use any dried fruit you like, or a combination of dried fruit.
