mini version of tofu turkey

For thanksgiving, I used the recipe found here

But instead of doing it their way, I made my stuffing separate and I have

some little turkey pans I found on ebay, in which I stuffed the tofu mix

into and baked. Then after the initial bake I dumped them out of the mini

turkey pans onto a cookie sheet, where I marinated them and baked them for

the second (reheat) bake.

 

I attached a photo of my dinner from thanksgiving. The turkey is the dark

brown lump at the back right side of the plate. It looked better in person

and it tasted great! I actually liked it better without the marinade. (I ate

some before marinading) Personally I think it turned out better doing it

this way than it did when I tried to make the whole roast with stuffing in

it!
